An infrared thermometer is a non-contact temperature measurement device. Infrared Thermometers detect the infrared energy emitted by all materials — at temperatures above absolute zero and converts the energy factor into a temperature reading. The most basic design consists of a lens to focus the infrared (IR) energy on to a detector, which converts the energy to an electrical signal that can be displayed in units of temperature after being compensated for ambient temperature variation. This configuration facilitates temperature measurement from a distance without contact with the object to be measured. As such, the infrared thermometer is useful for measuring temperature under circumstances where thermocouples or other probe type sensors cannot be used or do not produce accurate data for a variety of reasons. Some typical circumstances are where the object to be measured is moving; where the object is surrounded by an EM field, as in induction heating; where the object is contained in a vacuum or other controlled atmosphere; or in applications where a fast response is required.
Thermocouple thermometers are very good for use in the food industry because you can get a very accurate readout within 2 to 5 seconds. Because thermocouple thermometers are so quick, the temperature can be easily checked in a number of locations to ensure food is properly cooked. This is especially useful when cooking large foods, such as roasts or turkeys, because checking the temperature in more than one place is recommended. The thin probe of the thermocouple also enables it to accurately read the temperature of thin foods, such as hamburger patties, pork chops, and chicken breasts. With a thermocouple thermometers for food service you can measure food products in any phase of production from receiving an item to serving and holding. Thermocouple thermometers are mainly designed for food service industry. A thermocouple thermometer for food service is usually a two piece unit with a handheld readout unit with a detachable probe.
To use a thermocouple thermometer for measuring the food product at receiving or production you use different probes for the work. There are flat headed probes to measure surface temperatures, needle probes for internal measurements and ones to measure air temp of ovens.
Thermocouple thermometers for food service are invaluable to the industry because of the quick response and with multiple functionality.
Thermistor digitals generally have “built in” probes and sensors. They must be calibrated during the manufacturing process and so are not interchangeable. Thermocouple digitals, with some exceptions, can accept any matching category of probe (the two most common are K-type and T-type–these have different temperature ranges). We concentrate on K-type only, since this type spans all food application temperatures, and has more availability of probe options.
Accuracy can be very good with both types, but thermistor digitals are limited to the type of built-in probe they come with, and if the probe breaks, you have to buy a new thermometer.
